Back on the smoker this time, I show you not only how to make the main event for this recipe, but how to pull off the best damn Thanksgiving turkey you’ll ever have :) Just don’t try and compete with the wife or mom, you’ll piss them off when your turkey goes first! SUPER easy to make you can use any kind of basting you wish, I prefer a good beer, using Samuel Adams Boston Lager here, with some olive oil and italian seasoning. One again a delicious cross-over from HLO, I present an easy, inexpensive way to make an impressive fish meal. I did two in one here, whole red snapper and salmon fillets, you could apply this to anything similar. You can also do this on a gas grill or even your broiler (but nothing is more manly than charcoal). Prep is simple, you only need a few ingredients and you will be stuffed while eating very healthy (and not know it)!

One again a GREAT cross-over from HLO, this is an absolutely delicious fajita recipe and I promise you would NEVER think it’s actually really healthy and good for you! The swaps I use from normal fajitas make huge nutritional differences but you lose nothing in fact I think you GAIN flavors. If you don’t want to use the grill or do a big batch you can certainly do it up in a skillet, it will just take longer of course. You will also want to go easy on the marinade since it won’t cook and drain off like using the grill! A George Forman grill would be a great indoor tool to use for this. Most of the work here is in prep and waiting, and it reheats extremely well!

The smoky flavor of the chicken REALLY makes this something special. It’s packed with flavor on multiple levels and keeps for days reheating perfectly. You guys requested it so here’s my chili recipe! This is a traditional Red Chili, as you see on TV and in competitions. Don’t think of the canned crap you get from the store, this is just meat, sauce and flavor! If you follow this exactly you’ll be treated to a very warm but not fire-breathing result, with an even constant heat and complex blend of chili flavor and spices throughout. I talk about changes you can make of course, to suit anything to taste. Budget about $40 your first time making it and a good 4 hour chunk of time for a good serving of eight.

I teamed up with my buddy Justin from WhiskeyObsession.com (yes I gave him permission to use my moniker lol) as we show you how to make a delicious traditional Irish Corned Beef & Cabbage for St. Patrick’s Day, and he also makes his family’s recipe for Ox Tail Soup. No, it’s not Ox, it’s just beef – they just call it Ox :) It’s similar to a beef and vegetable soup but the tail meat has so much collagen in it that you get quite a bit of richness and fat rendering off, very different than other parts of traditional cuts. Of course, we being Irish, copious amounts of whiskey was used in both recipes as well, but you could omit or at the very least use red wine instead in your version. But it does make a big flavor difference, let me tell you!

Guy Stuff – Smoked Pulled Pork Sandwiches & Strawberry Key Lime Pie

This is a 1.5 recipe treat – the .5 because the pie comes straight from the side of the bottle with just a proportion tweak by me and a custom topping idea!

For the pulled pork, it’s super easy to make but needs quite a bit of time. Put forth the effort and you are rewarded with enough for 20 or so samiches of the most delicious pork you’ll ever have! At a cost of about $1.50 per, it’s very economical too for families or a party!

For the pie, if you can’t score the juice at your local supermarket you can order a bottle from the website here. My only tip is to triple the recipe to make two fully filled pies, otherwise you end up shallow following the bottle.

This is one of my favorite desserts, a creamy sweet smooth thick cake filled with rich goodness, topped with my favorite fruit, raspberries! I love the tang of the berries against the homemade frosting and cream of the milks. It’s a classic and is super easy to make even from scratch like I show you. If you want or need to you can always use boxed mix and canned frosting, but trust me, it’s NOT the same. A glass pan is suggested 350 for 30 minutes, drop down to 325 and 20 minutes if using metal then check at the end till done.

This time I have a bowl of spicy goodness (optional to make it smooth and creamy, see the video) cajun shrimp & crab bisque! This is a beautiful, creamy, silky smooth thick bisque with rich and zesty flavors combined with the tender sweet crab. You have to LOVE spice, but it’s easy to make this tame as I show. You can save some money by just using shrimp, or go more traditional and just use lump crab – it’s all up to you! This makes a big pot, just 1/2 everything to make it for 2-4 people. (more…)

Guy Stuff – Garlic Mushroom Red Wine Sauce Steaks

This is a very versatile recipe, one that can be made completely different by changing the type of steaks, prep method and added ingredients to your sauce. I show you a great base and my variation for it using garlic and mushrooms, but feel free to do your own things if you aren’t a ‘shroom fan as many aren’t. A couple big tips – use thick tender cuts of meat and a good drinking wine. You can grill your choice of steaks but you will miss out on a little beef flavor as you won’t have the browned bits to deglaze in the pan as the base for the sauce. (more…)
